Jhinga / shrimps / Prawn Biryani
INGREDIENTS FOR MARINATION :
prawns / shrimps 360 gm
vinegar 2 tbsp
garlic paste 1 tbsp
red chili pwd 1/2 tsp
salt 1/4 tsp or to taste
turmeric 1 pinch
vinegar 2 tbsp
FOR RICE :
sela or high quality basmati rice 350 to 450 gm ( soak 2 hours ) ( boil 80 % )
salt 4 tsp ( 6 tsp for 450 gm rice )
cloves 5
black cardamom 1
green cardamoms 3 to 5
star anise 1-1/2
bay leaves 2 to 3 small
vinegar 2 tbsp
lemon slices 2 to 3 small
FOR MASALA :
oil or ghee 1/4 cup ( 2 to 3 tbsp for prawns )
fried onion 1/2 cup
tomato puree 1/2 cup
yogurt 1/2 cup
red chili pwd 1/2 tbsp
coriander pwd 1/2 tbsp
nutmeg 1/4 , mace 1/4 , green cardamoms 3 , black cardamom seeds 1 ( powder them all )
green chili paste 2 tbsp ( mild ones )
turmeric 1/2 tsp
cumin 1 tsp
garlic ginger paste 1 tbsp
salt 1-1/2 tsp or to taste
keep 1 cup liquid in your masala ( gravy )
FOR LAYERING :
mint 2 tbsp
coriander leaves 2 tbsp
green mild chilies 4 to 5
ginger julienne 1/2 tbsp
lemon slices 3 to 4
orange food color 1/4 tsp
yellow food color 1/4 tsp
ghee or oil 2 tbsp
slices of tomato 4 to 5
