Decorated Swiss Roll 彩繪蛋糕卷 11x 11 inch square baking pan lined with baking tarpaulin Printed decorative pattern Decorative pattern: Egg 1 large separated Cake flour 20g Oil 10g Water 10g Sugar 10g Colouring 1 -2 drops Cake: Egg 4 large separated Cake 40g Oil 40g Water 40g Sugar 40g Pink colouring 2-3 drops Filling: Whipping cream 220g Icing sugar 20g Mango 1 pc peeled & cut into 3/4” cubes Separate eggs one by one. Preheat oven to 375F. Peel & cut mangoes. Prepare pattern: (Hello Kitty) Whisk egg yolk, oil & water together. Sift in flour. Mix well. Spoon 6g batter into a small bowl. Add black colouring. Mix well. Spoon 12g batter into another bowl. Add red colouring. Mix well. Spoon 36g original coloured batter to another bowl. Beat 1 egg white with 10g sugar until firm peaks. Spoon 3g meringue into black batter. Mix well. Pour into piping bag 1. Spoon 6g meringue into red batter. Mix well. Pour into piping bag 2. Spoon 18g meringue into original coloured batter. Fold to mix well. Pour into piping bag 3. Pipe eyes, nose & whiskers using black batter in piping bag 1. Bake at 350F for 30 seconds. Pipe bow & heart using red batter in bag 2. Bake at 350F for 1 minute. Pipe kitty’s head using batter in bag 3. Bake at 350F for 1.5 minutes. Variation: Car pattern: 12g black batter + 6g meringue 12g original batter + 6 g meringue 30g red batter + 15g meringue Prepare cake: Whisk oil, water & egg yolks together. Sift in flour. Whisk well. Add pink colouring. Mix well. Beat egg whites with sugar at high speed until firm peaks. Meringue forms small hooks on tip of beaters. Pour 1/3 egg whites into pink batter. Gently fold to incorporate. Pour mixture into left over egg whites. Gentle fold from bottom then cut in centre to incorporate. Pour batter into baking pan. Tap pan on counter to remove air bubbles. Use a scraper to smooth the top. Place baking pan onto another baking tray. Bake at 325 F for 20mins. Remove from oven. Drop baking pan on rack gently to release hot air. Slide cake onto rack to cool for about 10min. Beat whipping cream and icing sugar at high speed until stiff. Peel and cut mango into 3/4“ cubes. Place a large piece of parchment paper on top of cake. Flip cake over. Place another parchment paper on top of cake. Flip cake over again. Remove tarpaulin. Cut edge of cake close to you vertically. Cut edge of cake far from you in a slanted angle. Spread whipping cream on leaving about 1” empty space close to you. Spoon mango cubes close to the edge of cream and stack mangoes into a thick line. Spread more cream onto mango cubes to cover them. Place a rolling pin under parchment paper to lift and roll the cake. Pulling the far edge of parchment paper underneath to tighten. Cover and refrigerate the rolled cake for 1 hour. Remove cake from fridge. Dip a knife in hot water then wipe the knife before cutting each slice. Repeat the same procedure for every cut. 11x11 吋方形烤盤 芒果1個(去皮並切成3/4吋小塊) 低筋麵粉40g 水40g 糖40g 油40g 雞蛋4 隻 大 鮮奶油220g 糖霜20g 雞蛋逐隻分開蛋白與黃。 將蛋白放在冰箱裡。 烤箱預熱至375F。 準備圖案:(Hello Kitty) 將蛋黃、油和水攪拌在一起。篩入麵粉。攪拌均勻。 將6克麵糊倒入一個小碗中。加入黑色素,攪拌均勻。將 12 克麵糊倒入另一個碗中,加入紅色素,攪拌均勻。將36 克原色麵糊倒入另一個碗中。 高速打1個蛋白加10克糖,至企身。將3 克蛋白霜倒入黑色麵糊中,攪拌均勻,倒入裱花袋 1。倒6克蛋白到紅色麵糊中,攪拌均勻,倒入裱花袋 2。 將 18 克蛋白倒入原色麵糊中,折疊混合均勻,倒入裱花袋3。 用裱花袋 1 中的黑色麵糊唧眼睛、鼻子和鬍鬚,華氏350度焗30 秒。 用袋子 2 中的紅色麵糊唧蝴蝶及心,華氏350度焗1 分鐘。袋子 3 中的麵糊唧小貓的頭,華氏350度焗1.5 分鐘。 車仔圖案 12g 黑麵糊+ 6g 蛋白 12g 原色麵糊+6g蛋白 30g 紅麵糊+15g蛋白 預備蛋糕體: 攪拌油和水,加入蛋黃。攪拌均勻。篩入麵粉, 加粉紅色素,攪拌混合均勻 乾淨的碗中,用電動打蛋機高速打蛋白。從碗的側面逐漸加入糖。打蛋白直到略企身,提起攪拌器時,攪拌器頂部的蛋白呈小鈎子。不要打蛋白過頭,否則當捲蛋糕時會破裂。 將1/3的蛋白倒入麵糊中。輕輕折疊拌勻,一面轉動容器,一面將麵糊倒入其餘的蛋白中,由麵糊底部輕輕折疊,然後中間切下再由底翻起摺疊拌勻,直至混合均勻。麵糊倒入襯有烘烤油布的蛋糕盤中。 (如果沒有烘烤油布,可以用焗紙代替,但烘焙布較易操作。)焗盤輕敲檯上數下以清除氣泡,用刮刀將麵糊弄平。 華氏325度下烘烤20分鐘。 用打蛋器打鮮奶油和糖霜直至硬身,將芒果切成3/4英寸的小塊。 從烤箱中取出烤盤。敲架子上以釋放熱空氣,將蛋糕滑出,在架子上冷卻10分鐘。蛋糕的頂部應觸摸到乾身。 鋪一大張焗紙在蛋糕上,翻轉蛋糕,除去油布, 再鋪一張焗紙在蛋糕上,再翻轉,垂直切開靠近您的蛋糕邊緣。以傾斜的角度將蛋糕遠的邊緣切去。在靠近您的那邊留出約1英寸的空白空間,然後整塊塗抹鮮奶油,放下芒果粒排成一條粗條,鋪上鮮奶油包裹芒果粒。 捲麵棒放在焗紙下以提起,捲起蛋糕,用麵棒一面壓著蛋糕邊,一面拉下層焗紙收緊蛋糕卷,蓋上蛋糕並冷藏1小時。 從冰箱中取出蛋糕,切蛋糕前將刀浸入熱水中,抹乾,切下一片,切每片一前重覆浸熱水及抹乾刀身。 Thank you for watching my video.
