In today’s recipe video I show you how to make an Iraqi green bean stew. This is another simple yet delicious and nutritious dish and is normally served with rice but can be served with another grain of your choice. Ingredients: • one bag of frozen green beans • 1 onion • 2 garlic cloves • 4 tomatoes (blended) or 1 can of chopped tomatoes • 1-2 tbsp of tomato paste (depending on desired thickness) • 2 tbsp of oil (I used olive oil) • salt to taste Method: 1. Start by finely chopping the onion and the garlic. Then, heat the oil in a pot and add the chopped onion. Sauté for around 2-3 mins before adding the garlic, continue to sauté for a further 2 mins. 2. Add the green beans and cook with the onion and garlic, stirring occasionally, for around 5 mins. 3. Next, add the tomatoes (after making sure that the green beans have softened). Cover, leaving the lid slight ajar, and leave to boil for around 5 mins. 4. Remove from the heat to avoid splashing and add the tomato paste and season with salt. Return pot to the heat, reducing to a simmer, and cover. Leave to cook for around 15 mins. 5. After 15 mins, check for seasoning and add extra tomato paste if needed. Leave to cook for a further 5 mins. 6. Serve with rice, or grain of choice, and a side salad, if desired. Enjoy!
