Soya chunks Dum Biryani | सोया दम बिरयानी | Soya Dum Biryani | Godavari's Kitchen

Ingredients for Rice:
Basmati rice - 2 cups
Water - 2 ltr
Bay leaf - 1
Green cardamom - 4
Cooking oil - 1 teaspoon
Salt - 1 teaspoon
Rose water - 2-3 drops
Kevada water - 2-3 drops
Lemon juice - 1/2 lemon
Ingredients for Beresta:
Onion - 3 big size (chopped lengthwise)
Cooking oil for deep frying
Ingredients for Jhol:
Soyabean chunks - 1.5 cup
Shahi jeera - 1 teaspoon
Cinnamon - 1"
Carrot - 1 (chopped into small pieces)
Green chilli - 2 (slit lengthwise)
Ginger garlic paste - 2 teaspoon
Salt - 1.5 teaspoon
Tomatoes - 3 ( chopped)
Turmeric powder - 1/2 teaspoon
Red chilli powder - 1 teaspoon
Coriander powder - 2 teaspoon
Shahi biryani masala - 2 teaspoon
Cardamom powder - 1/2 teaspoon
Curd - 1/2 cup
Green coriander leaves - 1/4 cup
Mint leaves - 1/4 cup (chopped)
Lemon juice - 1/2 lemon
Rose water - 4-5 drops
Kevda water - 4-5 drops
Kasuri methi - 1 teaspoon
Cooking oil (for shallow fry)
Ingredients for Dum Biryani:
Green chilli - 2 (slit)
Mint leaves
Coriander leaves
Saffron milk - 6 tablespoon
Ghee - 6 tablespoon
Cooking oil - 1 teaspoon
Shahi biryani masala - 1/2 teaspoon
Warm water - 1 cup
Method for Rice:
1. Soak rice in water for 30 minutes. Drain it and keep aside.
2. Heat water in a vessel.
3. Add bay leaf and cardamon. Allow water to boil. Remove khada masala.
4. Add cooking oil, salt, rose water, kevada water and lemon juice.
5. Add rice into boiling water and let it comes to boil again in high flame.
6. After that reduce flame and cook rice to 80% in medium flame.
7. After rice is 80% cooked, turn off gas and drain excess water from rice. Keep rice aside.
Method for Beresta:
1. Heat oil in a pan.
2. Put chopped onions into hot oil and fry in medium flame till it is getting dark brown color.
3. Take it out and keep it aside in a plate.
Method for Jhol:
1. Wash soyabean chunks and drain water. Pour warm water in soyabean chunks, add 1/2 teaspoon salt and soak it for 30 min. Drain water and keep it aside.
2. Heat oil in a pan. Add shahi jeera and cinnamon. Temper it in medium flame. Add carrot, green chilli and ginger garlic paste. Add soyabean chunks and fry it for 2-3 minutes.
3. Add tomatoes and 1/2 teaspoon salt. Mix it. Close lid and cook for 2- 3 minutes.
4. Add turmeric powder, coriander powder, red chilli powder, cardamom powder, shahi biryani masala, curd, green coriander leaves, mint leaves, lemon juice, kevda water and rose water. Mix it properly.
5. Close lid and cook in low flame for 10 minutes.
6. After 10 minutes, add kasuri methi and mix it properly.
7. Turn off gas and keep it aside.
Method for Dum Biryani:
1. Take pressure cooker (without whistle) or any thick bottom container to prepare Dum Biryani.
2. Put thick layer of Jhol.
3. Pour 1 teaspoon of oil/ghee.
4. Put half of the cooked rice.
5. Put layer of Beresta.
6. Pour 3 tablespoon of saffron milk.
7. Put slit green chilli, coriander leaves and mint leaves.
8. Pour 1 teaspoon of ghee.
9. Add 1/2 teaspoon of shahi biryani masala.
10. Put rest of Jhol.
11. Put layer of rice and then green chilli and then saffron milk and then Beresta and mint leaves and coriander leaves and ghee.
12. Put 1/2 cup of warm water.
13. Put cooker in direct gas stove and cook it for 2 minutes in high flame.
14. Reduce flame to low and seal lid with dough
15. Cook Biryani for 10 minutes. After 10 minutes, turn off gas and keep it for another 10 minutes.
16. After 10 minutes, open seal.
17. Soya chunks Dum Biryani is ready. Serve it with boondi raita or vegetable raita.
